Absoulutely delicious. Be sure to serve warm with whipped cream.
- 1 1⁄4 lbs peaches, peeled and sliced
- 1 cup flour
- 1⁄2 cup butter, melted
- 2 eggs
- 1⁄4 cup peach schnapps
- 1 cup half-and-half
- 2 teaspoons grated lemons, zest of
- Place peaches in a 2 qt. baking dish coated with cooking spray.
- Process flour, melted butter, eggs, peach schnapps, half-and-half, and grated lemon zest in a food processor until smooth; pour over peaches and bake at 400 degrees for 35 minutes.
I think there's sugar missing from this recipe - thought the schnapps alone might provide enough sweetness, but it didn't really. The finished product was easy to make and pretty good once I sprinked a few tsp sugar over the top of it...
