Peach Chicken

- 4 chicken breasts
- 1 medium onion
- 1 1⁄2 lbs sweet potatoes, sliced
- 1⁄2 cup brown sugar
- 1 tablespoon orange juice
- 3 tablespoons honey
- 16 ounces peaches, canned
directions
- Preheat overn to 375 degrees. Arrange chicken in covered baking dish.
- Scatter potatoes, and add salt and pepper to taste.
- Cover and bake 30 minutes.
- Mix everything else (except peaches) in a bowl and drizzle over chicken and potatoes.
- Bake uncovered for 30 minutes.
- Baste as needed.
- Drain peaches (sliced) and add to casserole and bake another 30 minutes, basting as needed.
