Peach Bellini for Summer

• Yields: 5 cups

ingredients

• 3 cups ice cubes
• 2 cups peaches, pitted, peeled and cut into pieces
• 3⁄4 cup prosecco wine (substitute Champagne)
• 4 ounces peach schnapps
• 2 ounces white rum
• 1 teaspoon grenadine, as needed

directions

1. In the jar of a blender, add ice cubes, peaches, Prosecco wine, peach schnapps and rum. Blend until the mixture gets slushy.
2. At the bottom of a martini glass, pour in a little bit of grenadine syrup before pouring the peach mix into martini glasses.
3. Drizzle grenadine syrup around the edges of the glasses. Serve immediately.
