I adore frozen peach bellini's and this recipe is very close to my favorite restaurant's drink. Another cooking website is where I found and adapted this recipe from.
- 170.09 g spumanti, Astt, to taste
- 28.34 g peach schnapps, to taste
- frozen peaches, sliced
- Add a few frozen peach slices and liquor to blender and puree. The mixture should be taking on a slushy type texture.
- Taste and add more liquor or peaches as needed. Add ice and continue to blend until a nice frozen texture is acquired. Pour into glasses and garnish with peaches.
If you simply replace the frozen peaches with canned peaches and a bit more ice it is HEAVEN!!!
I'm with Chef 1309809! After reading the reviews, I bought a large can of canned peaches, drained off the syrup, and froze them. They were perfect! For brunch, I made them as is with the canned peaches. For a hot afternoon chilling by the lake, I threw in some vodka. Can't miss with this one.....
Peach Bellinis are my favorite drink, so I was very excited to find this recipe. However, it was a bit disappointing. It definitely needs some sweetening up and I would suggest using more peach schnapps to enhance the flavor.
