Peach Baked Apples

ingredients
- 6 medium baking apples
- 1⁄4 cup peach preserves
- 1⁄4 teaspoon cinnamon
- 1⁄4 cup apple cider
- 3⁄4 cup crumbled oatmeal cookie, soft batch
directions
- Core apples and cut in halves. Put apples in a 9x13 pan, cut side up. Preheat oven to 350°F.
- Combine the preserves, cinnamon & cider. Drizzle over the cut sides of apples and tightly cover with foil.
- Bake for 35 min.'s or until apples are tender. Remove from oven, sprinkle apples with crumbled cookies and spoon preserve mix on top. Put back in oven, uncovered, for about 5 min's.
- Serve warm, with or without a side of ice cream!

Why "SoupCookie"?
My cousin Ryan use to come to my house after school sometimes and was *always* hungry! So he used to make his version of chocolate chip cookies and I can't remember what he did or didn't do right but the cookies never failed to come out flat and doughy and gooey. We'd put them in a bowl with milk and eat it with a spoon.....sooooo good!
To this very day his recipe has not been deciphered ;)
