Peach and Cream Cake

This cake is super yummy. It has a similar texture to bread pudding, with the fluffiness of angel food cake. For extra sweetness follow recipe as is, for a mild sweet substitute the yellow peaches for 5 - 7 white peaches.

was surprisingly good. at first the batter was a muffin type rather than cake type batter. so i added 1 cup of milk and all the juice from a 15 oz can of peaches. this made it less fluffy. next time i'll leave as is and get out the muffin pan. the cream cheese frosting was great.

  1. Cake -.
  2. Grease pan.
  3. Beat together all ingredients except peaches until smooth.
  4. pour into greased pan.
  5. Drain peaches and place over batter.
  6. Topping -.
  7. combine all ingredients.
  8. beat until creamy.
  9. cover peaches and raw batter with topping.
  10. (optional) sprinkle over with cinnamon and sugar.
  11. Bake at 350F for 35 - 40 minute.
