From Nigella Lawson's "Nigella Express" episode "On The Run"
- 3 cups boiling water
- 1⁄2 teaspoon kosher salt
- 3 cups frozen peas
- 1⁄2-1 teaspoon lime juice
- 2 scallions
- 4 tablespoons prepared basil pesto
- Combine water, salt, peas, lime juice and scallions in a saucepan. Bring to a simmer and cook until peas are tender, 3-5 minutes. Remove scallions and discard.
- Transfer soup to a blender. Add pesto and process until smooth. Serve hot.
We generally make Nigella's "Slime Soup" (pea and parmesan) and I thought this would be a nice alternative. I think it could be improved upon by substituting the pesto for fresh basil and a little stock and maybe sprinkling toasted pine nuts on top.
I wanted to like this, and it's okay. It definitely is easy to make, but it is totally lacking in... something. I think the prefab pesto muddied up the flavours, which seemed generally flat. It's a good start, but will take some tinkering to make truly delicious.
