Needed to use alot of leftover mixed salad greens from a wedding and because we had tried this soup at a local restaurant, I did my zaar search and wasn't dissapointed. I made this soup for lunch today. We have a glut of lettuces in the garden so decided to try this soup.... it was delicious and I will be using it frequently. I had a ton of lettuce in the house a few weeks ago and didn't want it to all go to waste. This was the perfect recipe for me that day. I left out the mint, and used vegetable stock to make this vegetarian, but aside from that, didn't change anything else. We did feel that the amount of peas overshadowed the delicate taste of the lettuce, 1 kilo is way too many peas, it also made the soup a little too thick.
