PB and Cucumber Sandwich

ingredients

  • 2 slices white bread (okay, you can use 'healthy' whole wheat or multigrain, but I used to love it with good old white bre)
  • 4 -5 slices of peeled cucumbers (thin slices)
  • creamy peanut butter

directions

  • Spread desired amount of peanut butter on bread.
  • Place thin slices of cucumber on peanut butter, and cover with second slice of bread.

  2. My mother made these in the mid-60s, think 1964. The other kids at school thought they were weird but she was way ahead of her time trying to keep her kids healthy! No bologna sandwiches for us!
     
  3. What a fantastic combination! The addition of the moist yet crunchy cucumber adds a great contrast to the flavoursome (but slightly dry dependent of usage of butter) peanut butter. Personally I see the usage of smooth peanut butter as opposed to crunchy (preferably around a 93% peanut content) is a crime but I'll let you off as the initial idea is a great one, substitute in a crunchy version on possibly a slightly better type of bread and my review will rise to a whopping 5/5! Thankyou Ben
     
  4. I was going through my files on cucumber sandwiches this morning and realized I had not gotten around to posting a review on this delightful concoction. I particularly like it on lightly toasted roundels of fresh baguette. I run a hand full of dry roasted peanuts through my Champion juicer, like most foods, peanut butter is better fresh and since the Champion is so easy to clean, why not grind it fresh as I need it. I also like PB and banana sandwiches on whole wheat. I've tried most of my favorite PB sandwiches substituting other nut butters, almond, cashew, macadamian, Brazil, filbert and whatever else comes to mind. You can't hardly go wrong.   5. Your crazy, peanut butter and cucumbers do not go together AT ALL! Which is why I can't understand why this is so yummy :-). A nice alternative to PB&J. I like the added crunch of the cucumbers, it isn't too much but just enough to be satisfying. Addition: I am upping my origional star count because I am addicted to these sandwiches. I lived on these for lunch this summer. They are so good and so satisfying. Its also great on a rice cake and any type of bread will do as will toast (which adds its own wonderful quality to this sandwich). There is something just so satisfying about this sandwich. I know, its silly to get so worked up over a simple sandwich like this one but I love it!

I love to cook, but have limited resources. Someday I'd love to have a gourmet kitchen, as well as the time to spend cooking for large crowds. Right now I primarily cook for my family of three; one of which is a picky 7 year old!
