This is delicious and very easy to make! I modified a bit..I was trying to use up 1/2 a leftover papaya. I didn't cook it. Instead, I cubed it and placed all filling ingredients in the blender to almost smooth.
I used a prepared crust instead. I cut the circles and placed in a muffin tin (yielding 6 tarts). I froze the rest of the filling for later.
Soooo good. Enjoy!!

A note: Papaya (carica papaya) is referred to and sold as pawpaw in some parts of the world. However, pawpaw (asimina triloba) is a completely different fruit species native to the temperate woodlands of North America.
