I think this salad is A-Maize-Ing. My neighbors and husband loved it. I used fresh corn off the cob because it is in season. You can use the fritos to dip in the salad or out on top. Be sure to put the fritos on right before serving or they will be soggy. You could add a lot of things to this salad like bacon or black beans, but we decided not to mess with a good thing.

This was so so good! My husband ate it for lunch and dinner three days in a row. Probably not the lightest salad around, but next time I could sub some low-fat mayo to help that. It got better and better the longer it sat in the fridge (I left the crushed fritos separate). Will make again this summer!

Update: Made with low fat sour cream instead this time, just as delicious and lots less calories and fat!

Made this for a pitch-in and it went over very well. Good and tasty flavor. The next time I will either add a tad more mayo or not crush the corn chips as much as it turned out a little dry. Or maybe I'll try a different brand of mayo. Either way I will be making this again.

This was really good - took it for Easter and every bite was eaten. I used one can of corn and one can of Mexi Corn. In place of the Cheddar Cheese, I used the Four Cheese Mexi Blend. I added garlic salt and a 1/4 tsp of cayenne pepper, yummy!!!

Someone gave this recipe to my mother a couple years back, and when she made it and I tried it, I was in love!!!!! The pop of that sweet corn bursting into your mouth, is HEAVEN!!!! I use it as a dip, more than a salad. I also DON'T use the corn chips,instead I use the Spicy Sweet Chili flavored Diritos brand chips, The flavors match each other so well!!!!! If you haven't tried this recipe yet, you are TOTALLY missing out!!!!!!!

I love this recipe! I omit the green bell pepper and add fresh chopped jalapenos! Delicios! I have also added bacon to it! Kimberly Blackburn

I just prepared this dish, it is chillin right now. I used 3 large grilled corn on the cob,cuz i needed to use them . I took advise from other reviewers and used 1/2 lite Hellmann's and 1/2 lite sour cream, omitted the bell pepper ( my friend hates them ) and I am making it for her 33rd wedding anniv. party. I sub with 1/2 of a jalapeno. I also added about 1/2 tsp of chipotle chili powder to the mayo/ sour cream mixture. I will of course add the fritos when served. I will post the results after the party. I don't think I've made anything of Paula's, that was dissapointing.. Chao!

I used fresh corn that I steamed. I omitted the onion. I used a red bell pepper. I brought it to lunch today without the chips. But I'll have to try with them tonight. It's yummy and so creamy. Thanks Anna :) Made for I Recommend tag game

This is fantastic!!~ I loved this salad. I served this wiht our burgers and I couldn't keep my fork away from it!!??!! lol This really is a great salad. I loved the addition of the chili cheese fritos, they added so much flavor. Thank you so much for sharing.
