A perfect filling for puff pastry, cream puffs, donuts... I translated this recipe from Karlos Arguinano's website.


  1. Heat milk, lemon zest and cinnamon in a larger saucepan until very hot, but not boiling.
  2. Meanwhile, mix sugar, eggs, flour and vanilla in a mixing bowl until well combined.
  3. When the milk is quite hot, temper the flour mixture with a bit of milk, and then add it all back into the saucepan.
  4. Whisk constantly over medium heat until thickened.
