A perfect filling for puff pastry, cream puffs, donuts... I translated this recipe from Karlos Arguinano's website.
- 1 quart whole milk
- lemon, zest of
- 1 cinnamon stick
- 1 cup sugar
- 4 eggs
- 2 cups flour
- 1 teaspoon vanilla
- Heat milk, lemon zest and cinnamon in a larger saucepan until very hot, but not boiling.
- Meanwhile, mix sugar, eggs, flour and vanilla in a mixing bowl until well combined.
- When the milk is quite hot, temper the flour mixture with a bit of milk, and then add it all back into the saucepan.
- Whisk constantly over medium heat until thickened.
