Pastor's Wife's Peach Pie

"This is a recipe that has been in our family for who knows how long. My mother, a pastor's wife, once gave it to a local produce stand that began publishing the recipe in its annual cookbook under the name "Pastor's Wife's Peach Pie". It's really an incredibly easy, custard-based, peach pie. Free Stone peaches make it a lot easier to take the fruit off the pit, but if all you have are cling, just slice the peaches."

  • Preheat the oven to 450°F.
  • Peel the peaches and cut in halves. Separate the fruit from the pit.
  • Arrange the peach halves face down in the pie crust.
  • Mix the flour and sugar together. Then add the half and half, egg, and vanilla. Mix well.
  • Pour the custard mix over the peaches.
  • Bake at 450°F for 10 minutes. Lower heat to 350°F for 50 minutes or until the custard is set.
  • Remove from the oven and cool on a rack.
