Very tasty way of using ripe plantains. This is one of my favorite dishes! Plantains need to be yellow and a little tender for this recipe. Plantains that have many dark spots and are very very tender should not be used.

Wowzers, this totally rocks! OK so I adjusted the quantitites - made it with 2 plantains, 2 eggs, 1/2lb minced beef and about 4tbs sofrito - to serve just two. Absolutely amazing. Delicious and funky looking all in one. I served it with a little rice too, which worked well. Thanks!
