Pasta With Tuna Tomatoes and Capers

"This is a very easy recipe that you won't believe is really tuna. The capers and tomatoes accent each other perfectly. We made this for the vegetarians, but it was a big hit with everyone."

  • Prepare tomatoes and place in medium bowl. Sprinkle lightly with salt.
  • Meanwhile boil 1 quarts of water with some salt to cook the pasta. Cook partly covered until tender. Drain and then return pasta to pot.
  • Add Tuna (with the oil), garlic, oregano, capers, feta and basil (or parsley) to tomatoes. Toss to coat.
  • Add tomato mixture to pasta. Toss to coat again.
  • Serve with extra feta cheese sprinkled on top.
