Pasta with Tomatoes, Olives and Capers

- 680.38 g tomatoes, peeled,seeded,and chopped
- 4 clove garlic, finely chopped
- 453.59 g angel hair pasta (or your choice of pasta)
- 59.14 ml extra virgin olive oil
- 8 imported black olives, pitted and coarsely chopped
- 29.58 ml capers, rinsed,chopped if large
- 44.37 ml chopped flat leaf parsley
- salt & freshly ground black pepper
directions
- Toss the tomatoes and garlic together and drain them in a strainer while you continue with the recipe.
- Bring a large pot of well-salted water to a boil and cook the pasta until al dente.
- Drain it well, return it to the pot, and toss it with the tomato mixture.
- Toss again with the olive oil, olives, capers, parsley, salt, and pepper.
- Let sit for 3 to 5 minutes to absorb the flavors before serving.

I live in Omaha NE and am an audiologist at Boys Town National Research Hospital. I love to cook, as does my husband Michael. In the summer, we have a large garden and try to use alot of fresh fruits/veggies in our cooking. We have a 5 year old daughter, Kate and almost 2 year old son Sam and enjoy introducing them to new foods. One of their favorites is fresh pesto smeared on crackers!
