I came up with this one on my own a few years ago. I season pretty strongly so you may want to adjust according to your taste.

Ingredients Nutrition

Directions

  1. Crumble ground beef in skillet and drain. Add onion and garlic and cook until aromatic.
  2. Add orange juice, tomato sauce, garlic, red pepper flakes, cumin, salt, and sugar. Simmer for ten minutes.
  3. Meanwhile cook pasta according to package directions and drain.
  4. Add black beans and tomatoes to beef mixture until heated through.
  5. Dish pasta onto plate and top with beef mixture. Sprinkle with cheese.

Enjoyed this dish very much and will definitely make again. I think I will cut back on the cumin to 1/2 TB and omit the sugar next time. I also only used 8 ounces penne and it was just the right amount. Thank you!

I liked this recipe. It was easy and fast to put together which is always a bonus on a busy weeknight. My ground beef as over 1/2 lb so I added additional garlic and onion. I also one and a half timed the sauce ingredients because I like more with my pasta. Overall, this was a good recipe but I will definitely increase the spices next time I make it. Thanks for sharing!
