- 2 ounces dried mushrooms, soaked in water for 2 hours, drained and chopped
- 1 medium yellow onion, peeled and chopped
- 3 tablespoons olive oil
- 2 teaspoons garlic, minced
- 1⁄3 cup whipping cream
- 1 teaspoon tomato paste
- salt
- pepper
- 16 ounces dry pasta, cooked al dente (use your favorite)

Garnish
- parmesan cheese, grated (or Romano)
directions
- Saute mushrooms, onion and garlic in olive oil. When hot and flavorful, add the cream and tomato paste. Salt and pepper. Simmer for a few minutes and toss with the pasta.
- Garnish with cheese.
