  1. Pour cooking oil into a wok or skillet. Preheat over medium-high heat.
  2. Stir-fry garlic in oil for 15 seconds.
  3. Add zucchini and squash, stir fry for 3 minutes.
  4. Add mushrooms and onion, stir fry for 1 minute more until veggies are crisp-tender.
  5. Add tomato, oregano, and pepper.
  6. Stir fry 2 minutes more. Remove from heat.
  7. Add corkscrew macaroni and parmesan cheese to mixture.
  8. Toss to combine.
  9. Serve immediately. Sprinkle with mozzarella and add fresh ground pepper.
