  • Cook pasta until just tender.
  • Ladle 1 cup of pasta cooking liquid into bowl and reserve.
  • Drain pasta.
  • Saute onion& garlic in oil, then add 1 T water to skillet& cook over medium heat until onion is golden and tender, stirring often.
  • Add 1 c reserved pasta cooking liquid, spinach& tomatoes to skillet.
  • Cover& cook until spinach wilts, about 3 minutes.
  • Add cannellini beans& pasta.
  • Cover& cook until heated, about 2 minutes.
  • Stir in cheese& season with salt& pepper.

  1. I used feta cheese and let people sprinkle parmigian. Very good flavor all blended together and I gave it a dash of white wine, because, why not!
     
  2. I used the chickpeas too as I didn't have any cannellini beans. I didn't have any parmesan and used Ramono which is a little stronger, but fabulous. Thank you
     
  3. I'm always looking for a meatless, high protein meal during Lent. This was wonderful. Very filling and healthy. Served with whole grain bread, salad, and, of course, red wine.

  5. Easy to make and delicious: a great midweek meal! I made this exactly to the recipe, except for adding closer to ten cups of baby spinach leaves - I love spinach - and some fresh basil. I loved the cannelloni beans in this too. I found Kozmic Blues photograph enticing; it was that in part which drew me to the recipe, so I used pasta shells as in the photograph. How’s that for midweek lack of imagination! I’ve thoroughly enjoyed one portion of this tonight. Really yummy! And I’m taking the rest to work tomorrow to share with work colleagues!
