Loved this!!!!! I did add 2 cups of beef broth, when I added all of the other ingredients. I also made the pasta seperately and let my guests "add their own".

I love this recipe! I have made it several times and can't get enough of it. Other than adding two cups of beef broth and keeping the noodles separate so everyone can add their own (thanks reviewers!), I followed the recipe exactly. Thanks for a wonderful -- and easy! -- meal.

This is amazing! I think it does taste like Olive Garden's... Turned out perfectly simmering in the crock pot while I ran some errands. Thanks for a keeper!

Easy to make this delicious soup. We ate up the leftovers in no time! Thanks for posting.

Wonderful soup and very like the OG. I cooked the noodles separately and added them just at the end. They still seemed to soak up the liquid. I might try steaming the carrots so the soup doesn't have to simmer for so long or add additional broth as has been suggested. Now that this has become a staple, I find that I have decreased the pepper to 1/2 tsp or it is too peppery.

Very, very good. I used extra hamburger and I think next time I will use extra beans, too. I have already been asked about the recipe by several friends. Thanks for postin!

My family enjoyed this soup. I used petite dice tomatoes with chiles so the soup had a kick. I cooked the pasta separate and we added it to each of our bowls before we ate it and we topped it with some parmesan cheese. There was quite a bit left over so I froze it for later.

I've been using this recipe for some time now and really love it. I do make some changes. I double the amount of V-8, use only one can of tomatoes, double the garlic, and decrease the amount of salt by 1/2 tsp. I serve the pasta on the side to be added in the amount of each person's choosing. I almost always double this recipe and it provides me with 3 meal's worth for my family of 5. My changes carry through and I usually trade out a can of northern beans for a can of chickpeas. It freezes very well.

I loved this recipe, it tasted great, easy to make, and my guests left me nothing to freeze for later. Only thing I would change is adding the noodles, I think it would be better without. I will make this one again!!

We loved this dish! Unfortunately there are only two of us, and a recipe like this is hard to do just half of. I figured out that it's best to add the pasta to the individual bowls just before serving, so that I can freeze the rest of the "soup" part. Then I just thaw, reheat and add fresh pasta for a meal next time! I omitted the celery just because I didn't have any, but we didn't miss it! What a wonderful mix of flavors - and I loved the little bite it had to it! I served it with a salad and breadsticks. Thanks for sharing such a great recipe. :) We will definitely make this again (when we finish the leftovers).

Filling, fiberous and flavorful= fantastic! This soup is SO good. The flavors blend together for a taste you won't be disappointed in. I used regular tomato juice because it was all I had. I also added 1 can of beef broth and left out the salt because there is enough salt in the ingredients. I did not add the ditali until serving time so as not to soak up all that wonderful broth. All I can say is Mmmmmm!

This is not Olive Garden but it is delicious. I used ground turkey for the hamburger and initially left out the pasta and while we were in the process of eating remembered. I turned the soup back on, brought it back to a boil and tossed in the pasta. The only issue I really had with this, is that once the pasta was cooked, there was virtually no broth. I did add some beef stock when reheating.

I made this soup for my family, and for a ladies fall luncheon. It was wonderful. Be ready to share the recipe. I make it a day ahead, and let flavors combine. I also leave cooked pasta out until serving, or ladle soup over pasta that is already in each individual soup bowl for each serving. I added 2 c beef broth, and will try the red wine suggestion next time. I love soup, and this is a winner soup for all ages! Thank you so much! ps- Don't forget to have grated parmesan cheese available for topping the soup.

This soup is fantastic. I browned up the meat the night before so in the morning I just tossed it all ( less the noodles)into a slow cooker set on low and left for work. When we got home it smelled great and I tossed in the noodles and let them cook. By the time they were done the table was set and the kids were playing and my husband came home to a great evening. Thanks for this one.!!!

I chose this as one of three of your recipes for Pick A Chef. We had company for dinner and it was a hit! I followed the recipe as stated with the exception of adding a little red wine and beef broth. Very tasty!

This soup is delicious! It tastes so much like the Olive Garden’s that I’d have to do a side-by-side taste test to tell the difference. The only changes I made were: one of the 2 cans of tomatoes was Rotel (original), a can of Butter Beans instead of Great Northern, and I used 2 cans of mild V-8 to make it a bit more soup-like. As some others suggested, I cooked the pasta separately and added it to the bowls of soup so the remainder of the pot would not have the liquid adsorbed by the pasta. Thanks for sharing this , I’ll be making it often.
