I grew up in the south with a mainstay dish there called macaroni and tomatoes. I love it. Sometimes they would add fresh crisp fried bacon to the final dish. I never expected to see a likeness of this on any menu till I went to Vegas. Lo and behold said tomatoes con chili verde--oh my! They had my favorite food, done with one exception--chipotle powder and chili. I was amazed. I still prefer my old standby, but thought it interesting enough to post. Who ever knew an old poor person recipe from the south would be on the Vegas strip?
- 1 cup macaroni, boiled about 10 mins till done and drained
- 4 cups whole tomatoes, crushed with hands
- 1 (4 ounce) can diced green chilies
- Cook macaroni.
- Add tomatoes spice, chili (salt and pepper to taste.) You can add dash of chipotle powder and also fresh fried bacon, although on Vegas strip they added no bacon.
