Excellent - served this with stuffed artichokes and garlic bread....have to admit this was the best part.

Very easy easy recipe!!! Relatively quick and simple to make.... I don't use exact measurements - was a tad short on pancetta which I can pick up at DeLallos, an Italian specialty market...I grated Parmesan and assiago, and added a dash of nutmeg since several other recipes I looked at used it....I also am used to seeing peas in this dish in restaurants, but I had fresh very thin asparagus and green onions which I microwaved for 45 seconds and added for color.....WONDERFUL !!!!!

Update: This is my DH's favorite dish but since I've gone kosher he has been deprived. I recently found vegetarian bacon tho and now I use it along with a teaspoon of liquid smoke (since the veg bacon isn't as flavorful as regular bacon). Origional review: Yes, carbonara has no cream. If you can find it, try using Quancale (totally spelled wrong sorry). Its the traditional meat used for this and you'll never want to use anything else.

Very easy and VERY yummy! I added some garlic and onion to the panchetta when it was almost done to give a little more flavor. Definately a family favorite!

This was pretty good. I halved the recipe and added garlic but it did sort of seem to lack zing. Maybe I'll add more cheese next time. Really good, though. Thanks!

I came to Zaar to look for a recipe for carbonara that Ruth Reichl has in her recent book. This is very similar, although we omit the butter and use it with whole wheat pasta (to allay all of those guilty feelings that come with bacon fat). This requires a lot of fresh black pepper, don't even bother with the anemic pre-ground black pepper. Completely and totally decadent, it comes together as fast as boiling the pasta! Thanks for posting this Chia!

This recipe makes a very authentic Spaghetti alla carbonara. My husband fell in love with this dish when we were in Rome for our honeymoon so I thought it would be suitable for a Valentine's day dinner. I made it with pecorino Romano (as they do in Italy) and I bought European butter on the advice of a friend. The imported butter was definitely worth the extra few dollars. It made the dish very rich. Thank you for posting a carbonara recipe without all the North American additions!

I cut recipe in half for the two of us. The instructions were very clear and easy to follow. The second time I made it I poured the eggs and chese OVER the pasta and liked the way that worked better. Thanks Chia!
