Pasta, Bacon & Spinach Salad

ingredients

  • 125 g reduced-fat bacon, diced
  • 1 teaspoon minced garlic
  • 6 shallots, chopped
  • 300 g penne pasta, cooked
  • 150 g baby spinach leaves
  • 90 g low fat tasty cheese, grated
  • 12 cup ww caesar salad dressing
  • 2 lemons, cut into wedges (optional)

directions

  • Coat a large fry pan with cooking spray.
  • Heat and add the bacon, garlic and shallots.
  • Cook, stirring for 2-3 minutes.
  • To the pan, add the pasta spinach and cook until the spinach is just wilted.
  • Remove from the heat.
  • Stir in the cheese and dressing.
  • Serve garnished with the lemon wedges if desired.
  • This is good for lunch cold as well if you have leftovers.

  1. Excellent one dish meal. Used 2 cloves garlic and tsp red pepper flakes. The cheese I used was smoked gouda and added a bit of the pasta water which kept it moist. Great way to use ingredients you already have.
     
  2. Great recipe! I had to keep pushing my husband out of the kitchen because he kept coming back for "one more sample". I used a blend of asiago and parm cheese along with Ken's Ceaser dressing. I also used Hormel real bacon bits because I didn't have time to cook the bacon up. Will definitely be adding this to my summer BBQ rotation.

  4. Delicious. I used 3 green onions instead of shallots. I let them cook a little bit longer with the bacons and garlic. I used cheddar cheese but next time I'll try another cheese. I used Renee's caesar salad dressing. And I did use the lemon. Thanks Sonya. Made for Beverage tag.

I love cooking easy stuff but I love a challange ocasionaly on the weekends when i have a bit more time. My pet peeve is how much capsicum/bell peppers are in recipes now as i am elergic to them.
