Pasta and Veggies With Creamy Garlic Sauce

A vegetarian (can be vegan) alfredo--woohoo! I haven't made this yet, so please review and let me know if you do!

Another one of those times when I had to get my DIL to bring me some silken tofu (not something I usually stock in my kitchen), & since the recipe was quickly & easily completed, that was no problem!   1. Cook pasta according to package directions.
  2. Combine sour cream, tofu, oil, and salt in blender. Process until smooth.
  3. Put veggies and garlic in a large skillet over medium heat. Cook 6-8 minutes, stirring constantly.
  4. Reduce heat to medium-low. Add tofu mixture and stir to coat.
  5. Stir in pasta and heat through. Serve immediately.
