Passover Pancakes

Here is a lovely recipe for pancakes during the passover. From Good Taste Mag April 2000.

These are good, liked the currants and sweetness in it. But then, it was just OK, still had leftovers.

Ingredients Nutrition

  • 2 12 cups fresh orange juice
  • 4 eggs, room temperature separated
  • 2 cups fine matzo meal
  • 23 cup caster sugar
  • 23 cup currants (optional)
  • 2 teaspoons cinnamon
  • 2 egg whites, room temperature extra
  • icing sugar, for dusting


  1. Whisk orange juice and egg yolks together in a large jug.
  2. Combine matzo meal, sugar, currents and cinnamon in a large bowl.
  3. Make well in centre and add orange juice mixture using wooden spoon.
  4. Mix well.
  5. Using electric beater beat egg whites until soft peaks form.
  6. Add a spoonful egg whites to mixture mix inches.
  7. Add remaining egg whites using a large metal spoon to combine by folding.
  8. Brush on-stick pan with a little oil. Heat and cook pancakes as desired.
  9. Dust with icing sugar to serve.
