During Passover I always have a craving for cakes. Wonder why? Am always on the look-out for recipes meeting the requirements for this holiday. This cake is one I first made last year and certainly will make again.

Directions

  1. Preheat oven to 350°F.
  2. Lightly grease a 10 inch bundt or tube cake pan.
  3. Melt the chocolate.
  4. Beat the eggs and sugar on medium speed for 15 minutes.
  5. Add meal and potato starch.
  6. Beat on lowest speed until just mixed.
  7. Pour 3/4 of the batter into the prepared pan.
  8. Add melted chocolate to the remaining 1/4 of the batter.
  9. Stir until evenly mixed.
  10. Spoon chocolate batter into pan and swirl through with a fork.
  11. Bake for 50 to 55 minutes.
  12. Let cool 10 minutes before inverting.

super easy to make and very good but a little too sweet. next time, i'll reduce the sugar to 1 1/2 cups.
