  • 177.44 ml matzo cake meal
  • 177.44 ml sugar
  • 4.92 ml salt
  • 354.88 ml water
  • 4 large apples, pared and sliced
  • 14.79 ml lemon juice
  • 4 eggs, room temperature, separated
  • 59.14 ml oil

  • Toss apples gently with the 1 tablespoon lemon juice.
  • Combine cake meal. sugar and salt. Set aside.
  • Separate eggs. Mix yolks, water and oil until frothy.
  • Add the combined dry ingredients and sliced apples.
  • Beat egg whites until stiff.
  • Fold egg whites into apple mixture.
  • Pour into a greased 9 inch square baking dish.
  • Bake at 350 degrees for 1 hour.
  • Remove from oven and allow to stand 10 minutes before serving.
