Passion Fruit Vinaigrette

"This is an amazing salad dressing, sweet and light and very unique. I serve with Jamaican Jerk Chicken #82257 by Aroostook, over salad greens with strawberries and mandarin oranges, shredded cheddar - Wow!"

  1. Excellent. Light and refreshing with just a hint of tangy fruitiness. I serve simply over chilled iceberg lettuce tossed with halved cherry tomatoes, diced orange sweet bell peppers and purple onion, then top with diced blackened chicken, chopped green onion, crumbled gorganzola cheese and salt and pepper to taste. Occassionally, if I am in the mood for more spice than the seasoning on the chicken, I may replace the orange bell pepper with, or add, chopped aneheim or other hot pepper (left up to the preparers taste I suppose). This creates a wonderfully complex blend of sweet, spicy and fruity. The gorganzola adds just the right amount of savory to enhance the other flavors. A very healthy, yet satisfying, summer meal for an individual or as a starter for company. Very good!
     
  2. Perfect balance of the oil, vinegar and passion fruit. Served this over a salad of arugula, figs, goat cheese and spicy pecans - it was great! Would have served 8 for us.
     
  3. The passionfruit flavour is subtle but it allows the flavour of fruits like apples to really shine. I didn't have passionfruit juice so I extracted the juice from a passionfruit. I neeed to use 2 passionfruits to get half cup of passionfruit liquid. I added an additional 1/2 tsp of honey. Yum. I imagine this would be graet on fruit salads as well.
     
  4. This dressing was great - very light and refreshing. I served with mixed greens, strawberries, fuji apples and sugared almonds with a bit of shredded cheddar. It was a nice combination and my family really liked it.
     
  5. Great dressing. It was sweet with just the right amount of tart. Perfect for any salad with fruit and nuts. I served mine over mixed greens with sliced ripe pear and toasted almonds. I wish I would have thought of it at the market, but gorgonzola cheese would also have been great. Thanks for posting!

Hello! I was born in the US but travel back and forth from Panama with my new husband :) I come from a family of great cooks so my love for food goes way back. Being newly married I feel as though I have a lot to learn about ccooking for my family, but I really love making people oooo and aahhh with wonderful food.
