Such great chicken! I thought it was a little strange using bread crumbs as stuffing rather than actual stuffing/bread, but mixed with the rest of the ingredients it was great. I loved the cream sauce even though I had to decrease the amount of mushrooms for DH sake. Will be making this again! Made for My Three Chefs.

  1. Cut a pocket into each chicken breast.
  2. In a resealable plastic bag, combine flour, salt, paprika and pepper. Add chicken, one piece at a time, and shake to coat.
  3. For stuffing, combine bread crumbs, onion, poultry seasoning and salt. Add 2 tablespoons butter and water, toss until bread is moistened.
  4. Fill the pocket of each piece of chicken. Use a toothpick to secure stuffing.
  5. Dip the chicken in the remaining melted butter and place in a baking dish. Drizzle any remaining butter over the chicken.
  6. Bake chicken at 325 for 50-60 minutes or until juices run clear.
  7. Meanwhile for sauce, in a skillet saute the mushrooms and onion in butter until tender.
  8. Cover and cook for 10 minutes.
  9. Push the mushroom mixture to the side and stir flour into the butter.
  10. Reduce heat to low, stir in cream, sour cream, salt and pepper. Cook and stir until mixture thickens. Serve over chicken.
