This recipe came from a cookbook that was sold as a fund raiser. It is a very good potato side dish and goes with meat, fish or poultry.
- 2 lbs red potatoes, washed and cubed
- 1⁄4 cup fresh parsley, chopped
- 4 cloves fresh garlic, chopped
- 1 chicken bouillon cube
- 1⁄4 cup water
- 1 tablespoon butter
- 1 tablespoon olive oil
- Boil cubed potatoes about 20 minutes (don't overcook), drain In a saucepan, mix 1/4 cup water with chicken cube, garlic, chopped parsley, butter and olive oil Bring to a boil and cook for 2 minutes Pour mixture over drained potatoes and stir to mix.
4 cloves of garlic overpowers this recipe in my opinion. I would substitute 2 TBS of onion flakes and add more water.
These turned out SO great! Paired with grilled pork chops this made for a super-easy dinner. I know I have a wonderful recipes that I can make again. Thanks for sharing!
I am always looking for new ways to make potatoes. These are some of the best that I have ever had. I thought they would be good, but they were way beyond good...they were excellent. My husband and best friend agreed, too. Thanks so much!
