Parsley Pesto

  • Combine the tomatoes and oil in a blender or food processor and puree briefly.
  • Add the parsley, garlic, and salt and continue to blend, stopping to scrape down the sides with a rubber spatula if necessary, until smooth and thick*Serve as a spread on crisp toasted rounds of bread to float on top of a soup.
  • Also may be served with sliced tomatoes and fresh mozzarella or with steamed vegies.

  1. Outstanding! I halved the recipe and used 1/8 teaspoon garlic powder (= 1 clove garlic). I didn't change anything else in the recipe. On its own, the pesto seemed a little too salty, but it's perfect as a condiment. I used 2 tablespoons of this pesto over 2 oz spaghetti and sprinkled with a teaspoon of grated parmesan cheese for a wonderful dinner. Thanks Tish!
     
  2. SO DELICIOUS! Such a wonderful fresh flavour! Ive been putting it on anything and everything that could do with a little bit of zing. Added some to fresh ricotta and used that on sandwiches, in soups, on boiled eggs. YUM!
     
  3. I marinated some veggies in this then roasted them for 40 minutes at 475, and they turned out great! I added some fresh rosemary, too.
     
  4. Wow, this is simple, healthy, quick, easy and delicious. I've been eating it straight out of the blender but plan to use it on whole wheat toast. Thanks for posting.

I live in Las Vegas. I was lucky enough to run into Recipezaar around Nov. 2000 and got hooked quickly. I am a cookbook collector and have been collecting recipes for as long as I can remember.
