    I think I snagged this from one of my random cookbooks I picked up at the grocery store. It's not bad at all if I do say so myself. GREAT for beginners!

    Ingredients:

    Serves: 4

    Yield:

    chicken ...

    Units: US | Metric

    Directions:

    1. 1
      Coat chicken fillet in flour (May need to cut the chicken first so it's not too thick).
    2. 2
      Combine bread crumbs, Parmesan cheese & parsley.
    3. 3
      Combine egg and milk in a bowl.
    4. 4
      Coat fillets in egg, then dip into the crumb mixture.
    5. 5
      Press the crumb mixture onto the chicken then refrigerate for 30 minutes.

      Heat the oil in a frying pan over medium heat.
    7. 7
      Add two of the chicken breasts and cook, turning once, for 10-15 minutes or until chicken is cooked through.

      Serve with lemon and boiled potatoes drizzled with butter and chives.

      This is a very simple recipe with lots of flavour. I think if I make it again I will bake it instead of cooking in a frying pan. Thanks for posting :)
