Parmesan Mashed Potatoes

Easy but spruced up with Parmesan Cheese and Chives.

Quick and tasty potatoes that went well with hamburgers and steamed brocolli. No changes to the recipe apart from using green onion tops instead of the chives.

  1. Place potatoes in a large pot& cover with an inch of water, bring to a boil, reduce heat, simmer and cook until fork-tender, about 30 minutes.
  2. Drain& return potatoes to pot.
  3. Mash potatoes with a potato masher.
  4. Stir in remaining ingredients and mix well to combine.
  5. Yields about 2/3 cup per serving.
