  1. Preheat the oven to 425 degrees.
  2. In a small bowl, combine the mustard, oil, oregano, and parsley.
  3. Season the chicken with salt and pepper and then brush all over with the mustard mixture.
  4. Place the chicken breasts upside down on a rimmed baking sheet.
  5. Sprinkle evenly with half of the Parmesan.
  6. Turn the chicken over and coat with the remaining cheese, pressing lightly to adhere.
  7. Bake for 20 minutes, or until golden and cooked through.
  8. Remove from the oven and let cool for 5 minutes before serving.
