Parmesan Courgettes (Zucchini)

  • Heat a little olive oil in a pan and add the courgettes.
  • Cook until slightly browned then add the garlic, lemon juice and zest and stir though. Sprinkle over the parmesan and stir to coat the courgettes. Fry until the parmesan crust crisps up.
  • Serve with some parsley sprinkled over the top and wedges of lemon if desired.

  1. I really enjoyed this zucchini! Like another reviewer, I've done similar recipes, but without the lemon. Really enjoyed this addition....it seemed to make it taste "fresher". I'll make this again....thanks for sharing! Made for Stars tag.
     
  2. Went out yesterday and bought all kinds of fresh summer veggies that are now available. Saw this recipe and said to myself "give it a shot". Of course I love fresh veggies in almost any form from raw to well "integrated" into a recipe. This was simple. It let the zucchini shine through. Have done similar recipes, but wihout the lemon. It's a "yummer" and a keeper. Thanks for sharing!

  4. This was good. I had a problem though. I couldn't get it to crisp up. I turned out to be a gloppy mess of cheese. The taste, however, was wonderful! Thanks for the recipe!
     
  5. Nice and quick side dish. Flavors were really good together. I cut back on the cheese a little since the rest of our meal had so much fat going on. Zucchini and Parmesan is one of my favorite combos. Hopefully we will get some zucchini in the garden soon and I can do this more often! Made for my Babes for ZWT4 Italy.

Melbourne I live on a 5 acre property in the Dandenong Ranges Victoria, Australia, having moved from the burbs when I became pregnant with my now 15 year old daughter Alyssa. Once my daughter was born I became a stay at home mum as I couldn't bear the thought of putting her in daycare. She is the light of my life, I never imagined myself as a mum when younger but now wouldn't have it any other way. Alyssa was made a big sister on the 19th April 2010 when our cheeky little boy Blake was born. I love cooking and experimenting with new recipes so quickly become addicted to Zaar as it was previously known & still use it regularly. In addition to being my kids taxi :lol: I also spend my time, reading, gardening and of course shopping. I'm lucky enough that we have the space & so love growing our own fruits, vegies & herbs, this also means we have plenty of room for animals & at the moment have 2 dogs, Max, a Jackshund who's 6, Fletcher, a Kelpie who's 4, 6 cats Snowpea, Fergus, Ginger, Tango, Annie & Cookie, 4 chooks & 2 Ducks. As well as our pets, we also have a lot of native animals around our area, we have kangaroos, wombats, echidna's, possums as well as rosella's, galah's & Cockatoo's hence the name of where I live..
