Parmesan Chive Popcorn Muffins

"This muffin was created and baked by Room A5A, North Haven Middle School (CT) students. It is an easy recipe that uses ingredients that are inexpensive and usually on hand. The class chose to develop the popcorn muffin because we run a business named "The Popcorn Palace.""

  • Sift flour, measure and sift with baking powder, salt, and sugar.
  • Add milk, popped corn, eggs and melted butter.
  • Stir in cheese, garlic and chives.
  • Fill well-oiled muffin tins 2/3 full.
  • Bake in pre-heated oven (435 F) for 20- 25 minutes.
  • Makes 12 regular size muffins.

All about North Haven by the A5A students. North Haven is a better place than New York City because it's hardly busy. The North Haven Fair is the best. One of us works at the chowder booth. We like the fair for the games, the rides and the food. The fair is every September on the weekend after Labor Day. There is a Memorial Day Parade on the Saturday before Memorial Day. Connecticut's army is in the parade. Also, in the parade are the North Haven Veterans of World War II. In the summer, we go to the concerts on the Town Green. We bring camping chairs, buy food and listen to the music. We all like going to the movies at the Showcase Cinemas. There is also a great dog groomer located in the center of the town.
