This is delicious chicken salad. I left out the celery and didn't really measure any of the other ingredients - just added to taste. Lovely on toasted bread or with crackers. Thanks for sharing!
I made this with leftover turkey instead of chicken. The lemon juice, basil and Parmesan provide some interesting flavor contrasts. Really nice sandwich. Made for Newest Zaar Tag.
We loved this. I used Tyson pre-cooked chopped chicken and shredded Parmesan instead of grated. Loved the fresh basil and Parmesan cheese for a change of pace. Excellent flavors. I served mine on New York Rye bread. Made for PAC 2009. Thanks for posting. :)
I enjoyed one of these yummy sandwiches for today's lunch, made on crusty ciabatta. Strange - and rather alarming - how fixed some of us can be in our habits! I use parmesan regularly when preparing and eating pasta and some meatball and meat dishes, but I don't recall having ever added it to a chicken salad before. How ridiculous! Having now done so, it's such an obvious ingredient to add. You get so much flavour from so little cheese so that the recipe remains relatively low fat. The sandwich was wonderful and one I'm adding to my rotation of take-to-work sandwiches. Thanks for sharing this recipe, Heidi. Made for Newest Zaar Tag.
