Made this last night for the family. It is definately a keeper around here! I think I may have overbreaded, but the chix tasted great!
This was great. I changed the servings to two because it was just me and my husband. The combo of butter/oil made a nice crunchy texture, and the cooking time was perfect - I didn't overcook the chicken (which I am famous for!). I served over 3 ounces of penne pasta and jarred sauce. So good - thanks for sharing!

My whole family (including my 2 children, ages 3 and 5) absolutely loved this recipe! The outside was crisp and delicious and the inside was incredibly juicy! I found this recipe last minute and was able to make it will all things I had on hand! I only used 3 chicken breasts, so omitted the part obout preheating the oven. The recipe calls for 2 tablespoons of water, but then doesn't say what to do with it. I used it to mix with the egg to thin it out a little. Otherwise, it gets real gloppy on the chicken. I also added a little garlic powder (about 1/2 tsp.) to the cheese/breadcrumb mixture. I used olive oil with the butter to fry the chicken in, and it added a real nice flavor! I would highly recommend this recipe! Would also be great served on a bun with lettuce, tomato, mayo...I don't think you could go wrong no matter how you served this delicious chicken!
