Yummy sort of unusual recipe. I knew the ingredients (I made it!) but you couldn't really pick them out, they combine to make an interesting but delicious flavour.

  1. Preheat oven to 200degC (180degC fan forced).
  2. Whisk mustard, juice and garlic in a shallow bowl.
  3. Combine breadcrumbs, parmesan and parsley on a large plate.
  4. Dip chicken in mustard mixture, then in breadcrumb mixture to coat evenly. Place on a plate. Cover with plastic food wrap, chill for 15mins.
  5. Heat oil in a large frying pan over moderate heat. Cook chicken for 1-2mins each side or until golden brown. Transfer to a baking tray. Bake for 10mins or until cooked.
  6. Serve with salad and roast baby potatoes or whatever takes your fancy.
