Parmesan Chicken

"Yummy sort of unusual recipe. I knew the ingredients (I made it!) but you couldn't really pick them out, they combine to make an interesting but delicious flavour."

  • Preheat oven to 200degC (180degC fan forced).
  • Whisk mustard, juice and garlic in a shallow bowl.
  • Combine breadcrumbs, parmesan and parsley on a large plate.
  • Dip chicken in mustard mixture, then in breadcrumb mixture to coat evenly. Place on a plate. Cover with plastic food wrap, chill for 15mins.
  • Heat oil in a large frying pan over moderate heat. Cook chicken for 1-2mins each side or until golden brown. Transfer to a baking tray. Bake for 10mins or until cooked.
  • Serve with salad and roast baby potatoes or whatever takes your fancy.
