I always hear, "mayo on chicken? Ewww." Well, just try it. It must be the most simple recipe I know. Delicious!
- 1⁄2 cup mayonnaise (whichever you prefer) or 1⁄2 cup Miracle Whip (whichever you prefer)
- 1⁄2 cup fresh grated parmesan cheese
- 4 boneless skinless chicken breasts
- Lay chicken in a shallow baking dish.
- Mix together mayo & parmesan.
- Spread over chicken.
- Bake at 350F for about 50 minutes.
This was tasty and very simple to make. I used low fat mayonnaise and added minced garlic, kosher salt, cracked pepper, smoked paprika, and chopped parsley. Even with my additions, it took mere moments to get it into the oven. Baked to perfection in 46 minutes. Great basic recipe.
In the words of my kids (aged 3 and 7), delicious! I happen to love chicken cooked with mayo on it, as it locks in the juices and makes for more tender chicken breasts. I was looking specifically for a recipe with parmesan and mayo, so this one was the obvious choice. Great simple recipe that I'll make many times. Thanks for sharing!
FANTASTIC AND SO INCREDIBLY SIMPLE! Followed Cherry's advice and added a little parsley and garlic powder. I'm planning to use the chicken with cous cous and bulgar wheat for a packed lunch for work. I poured liquid residue and emulsified in a jar in the fridge....I'll be adding the wonderful parmesan mayo sauce as a dressing...maybe with some tomatoes, olives and basil YUM!
