I like to pare this dressing with mixed greens, cherry tomatoes, dried blueberries and toasted almonds. This is a recipe that I take with me when we travell and are staying in condos.
- 1 garlic
- 1⁄2 teaspoon salt
- 2 tablespoons balsamic vinegar
- 1 teaspoon lemon juice
- 3 tablespoons basil, chopped
- 1⁄4 cup parmesan cheese, grated
- 1⁄4 teaspoon pepper
- 1⁄2 cup olive oil (or 1/4 cup water, 1/4 cup oil)
- Place all the ingredients in a blender and mix.
