Sweet warm squash with a hint of parmesan and toasty pine nuts. A great side dish.
- 1 acorn squash, cooked (I grill mine whole in tin foil after removing seeds)
- 1⁄4 cup shredded parmesan cheese
- 2 tablespoons butter
- 1⁄4 cup toasted pine nuts
- Scoop squash out of shell.
- Add cheese, butter and pine nuts and blend.
- Salt and pepper to taste.
