Pappasito's Brochette Shrimp - Copycat Recipe

ingredients
- 12 large shrimp
- 6 slice bacon, cut in half
- 1 fresh jalapeno
- 1 slice monterey jack cheese, thick
- 14.79 ml paprika
- 14.79 ml cayenne pepper
- 2.46 ml fresh ground black pepper
- 118.29 ml butter
- 59.14 ml white wine
- wooden skewer, soaked in water
directions
- Clean and devein shrimp, leaving the last section and tails intact.
- With a paring knife, carefully slice each shrimp from tail to tip.
- Wash and seed jalapeno, and cut into a pieces about 1/2-inch X 1/2-inch squares.
- Cut slice of cheese into 12 small pieces.
- Stuff one small piece of cheese and one small piece of jalapeno into each shrimp.
- Wrap a half slice of bacon around each shrimp.
- Place shrimp on a wet skewer.
- Repeat this process until all shrimp have been placed on skewers.
- Place in refrigerator for a few minutes while you prepare the rest of the recipe.
- Mix the paparika, cayenne pepper and black pepper together.
- In a small skillet, heat butter and white wine until butter is completely melted.
- Prepare grill.
- ~note~I use my indoor grill, but these can be made on an outdoor grill too, but I would use a low flame!
- Remove shrimp from fridge and brush completely with melted butter.
- Sprinkle with seasonings.
- Grill on each side until shrimp are done.

"awesome.. really not spicy at all. Do use the 15 per pound shrimp as it is difficult to wrap smaller shrimp. Also, after stuffing the shrimp with the pepper and cheese, lay the bacon flat on cutting board and place the shrimp about one inch from the end of slice. roll the end over then pick the whole thing up and then continue to wrap covering as much of the large end of the shrimp otherwise when grilling, thje pepper and cheese tend to fall out...

We have eaten at the Pappasito's restaurant many times over the years and their shrimp is absolutely delicious especially with the butter dipping sauce. We made these last night on our indoor grill and they were very close to the original. They are a little time consuming to put together, but well worth the effort. My hubby wants to grill them on the charcoal grill next time. I found jumbo shrimp on sale and this size works best. For those people concerned about the heat from the jalapeno, they really aren't spicy -- the pepper just adds another level of flavor. Without the seeds, the pepper is really delicious. I recommend this dish to anyone who loves to grill shrimp. Thanks for the post.

<p>Cooking for family and friends is one of my favorite things to do. I spend most of my free time in the kitchen, either checking out Recipezaar or experimenting with a newly found recipe. <br /><br />My DH and I are both from Texas and we both come from Italian families. Anyone who stops by my house should be prepared to eat!!! I'm always forcing friends and family to try whatever it is that just came out of the oven. I know that is a horrible habit but I can't break it... I think it must be the Italian in me!
