Papa's Okie Cornbread

"Delicious cornbread makes a great accompaniment to chili or beans or any cool weather soup. This is my Grandpa's (PaPa) original recipe for the best dern cornbread in the world."

• Yields: 1 Skillet
• Serves: 8

ingredients

• 1 1⁄2 cups cornmeal
• 1⁄2 cup all-purpose flour
• 3 teaspoons baking powder
• 1 teaspoon baking soda
• 1 teaspoon salt
• 3 teaspoons sugar (optional)
• 1⁄4 cup vegetable oil
• 1 eggs or 2 egg whites
• 1 1⁄2 cups buttermilk

directions

1. Preheat oven and 10" cast iron skillet to 450.
2. Sift dry ingredients together.
3. Mix in egg, oil, and buttermilk, stir until well combined.
4. Remove preheated skillet and melt two tablespoons butter by swirling the pan to coat the sides and bottom.
5. Pour in batter and bake for 20 minutes.
6. Enjoy!
