Delicious breakfast! Even though I made a few adjustments, the end result was absolutely delicious. I could not find the canned potatoes, so I used some fresh diced potatoes that I steamed in the microwave. I ended up having too many potatoes, so I added two beaten eggs to the Egg Beaters. I seasoned the vegetables with salt, pepper, and Spike salt-free seasoning. Also, before putting in the oven, I sprinkled some Monterey Jack cheese on top. This took 15 minutes in the oven, and came out so light and fluffy! I have never had such soft eggs! Really a treat, and it made a lot. Thanks for sharing! Made for Spring PAC 2011.
