I made this soup the other day, but with a few modifications. Since I only had a 1/2 lb of the ground beef in the fridge, I only used 1 can of the beef broth, 1 can of tomato soup, and I used a can of diced tomatoes with the green chilies. I didn't add the Italian seasoning, since I used the canned tomatoes with the green chilies, and I only used about 1 and 2/3's cup of the (uncooked) macaroni. I also added about 3 tablespoons of diced red onion, 2 cloves of garlic (minced), about 3/4's of one stalk of celery (thinly sliced), and 1/3 of a large green bell pepper (diced). I didn't simmer the soup for 30 minutes, as I needed a meal on the table a.s.a.p., so I just heated it through after adding the cooked macaroni. Since I had used canned tomatoes w/the green chilies, and I forgot to add the Parmesan cheese with the first serving, this soup tasted more like a chili-mac, and boy was it good! I had a 2nd serving, and topped it w/the Parmesan cheese, and that was good too. I plan on making this soup once again in the near future, as I'd like to try it w/the Italian seasoning, but not adding the canned tomatoes w/the green chilies, and I'll be sure to simmer the soup for 30 minutes, but if others want a quick 'n' easy, hot 'n' spicy chili-mac(w/o the beans), try this recipe, and using the canned tomatoes w/the green chilies, as well as the onion, garlic and celery. It's quite delish!! Thank you Recipe Reader for posting this recipe. My husband and I thought it was very good!!

This was very good! I did cook a small diced onion and a diced stalk of celery with the hamburger. I will need to cut the recipe in half because it did make quite a lot. Thanks for posting! Mary

I am giving this soup recipe 5 stars for ease, comfort factor and taste. I loved that a soup this simple could taste so yummy. I followed the recipe just as written with great results. Thanks for a keeper! :)

Wasnt feeling to well after shoulder surgery and DH made this soup for me. He doesnt like to cook much in the kitchen, he grills, but he did a great job on this soup. I had petite diced tomatoes and small macaroni noodles so that is what DH used. Simmered on low for about one hour and enjoyed with a little fresh parmesan cheese on top. Very tasty and easy soup to make! Made and reviewed for Please Review My Recipe Tag Game.

I threw the ingredients in my crockpot, and put the cooked macaroni in the fridge. It's so nice to have comfort food ready when you walk in the door. Delicious! Made for Alphabet Soup Game. Thanks for a great recipe Stephanie!
