My husband really liked this soup. My daughter and I thought it was just okay. Last night we both thought it had a funky sweet/off taste, but today for lunch it's much better. I am enjoying it much more today than last night. Go figure. All in all, it's easy and a man pleaser, so I'll probably make it again.
This is an excellent recipe for potato soup! Next time I will be adding some chopped up ham for some extra meat flavor! The only change I made is I added a stick of butter to the pot towards the end. I love butter in my potato soup! For anyone who wants additional flavor add some cheddar cheese. That tastes great too! Thanks so much! This is a keeper. One more tip about the cream cheese, the recipe says to turn down the heat to low when adding the cream cheese. I had no trouble with it melting and being smooth when I kept it at low. One other thing I did that I forgot to mention was to mix some flour with water and add it to the pot. That helped thicken the mixture a bit and smoothed it out too. Hope this helps.
I love this soup. Super fast, super yummy. I've made a few variations now and then with carrot or ground turkey, but the original recipe is definately my favorite. We have this at least twice a month. Thank you
I've made this twice in the last two weeks. It's delicious! Made some bacon to go on it last time. Extra tasty!
So wonderful! This was great on a cold winter night here in Michigan. :) I added crumbled turkey bacon and a little bit of celery, but it surely did not need these extra ingredients...will surely make again. Thanks for sharing.
This was really good and very filling. I didn't have white or red pepper so I used black pepper instead and it still turned out great. I think this is one of the best soups I have ever had in my life, so I really appreciate the recipe! I stirred the soup with a wire whisk to get the cream cheese to finish melting quicker, because the soup smelled so good that I didn't feel like waiting another 5 mins for it to melt! I made some bread in my bread maker and served that with it and it was a very delicious (and cheap) dinner. Next time I might try adding in a small can of corn.
As everyone agrees, this soup is delicious! I think the problem with the cream cheese not "melting" is actually that it has curdled in the boiling broth. Next time I may try to let the broth cool down for a while before adding the cream cheese, and then slowly rewarm it to serving temperature, being careful not to boil.
This was a really, really good potatoe soup. (I don't really care for potatoe soup). However, as other reviewers have commented, how do you get the cream cheese to melt totally? I did find that the next day, when I reheated, the cream cheese did melt more, but on the day it was made, the cheese wouldn't melt totally.
This was a great recipe! I made this for my family last night because it was so cold and it was a big hit. I started out by cooking my onion in a little bit of butter before adding the broth and potatoes. I also used lemon pepper and garlic salt instead of the seasoning salt and white pepper. I also added some freshly grated Parmesan cheese to it. I think next time I make this I will add just a taste more red pepper flakes to give it just a little bit more kick. Thanks for sharing the fantastic recipe.
