We absolutely love this salad! Would be nice as a sandwich too, I'm sure.
This was very good! I used Chiabatta bread and just mixed all the ingredients together. Then cut the bread into wedges and spooned it onto the bread. This will make a great appetizer this summer. Thanks!
This happens to come in a sandwich version at Corner Bakery, and is my favorite thing on their menu, so I knew I would love this recipe. It was sooooo good. Normally I detest tomatoes, but with the balsamic vinegar & oil, salt pepper, and I added a dash of garlic powder, it takes away the watery tomatoey taste that I don't like. I will make this again many times, thanks so much for posting it!
I made this for Favorites of 2009 Tag game...thanks to Kumquat the Cat for putting it in her cookbook! This is delicious! I wish it was summer and I could really enjoy a great homegrown tomato in the recipe!
To tell you the truth I never ate at a Panera Bread (none in my town), but this salad was fantastic. Tomato and mozzarella salads are my BF's favoirte and coupled with the focaccia it was fantastic, and a main dish for vegetarians like us - I served it with a side salad. Also I went easy on the red onion and added a bit more cheese. Left the basil off my BF's share (personal preference) but added plenty to my own. Used Quick, Low Fat Balsamic Vinaigrette for the vinaigrette. Made for PARTY game 2009.
We've made this 3 times in the last 2 weeks... FANTASTIC! My favorite salad at Panera, and very easy to prepare at home. Can't wait until summer when tomatoes are plentiful!
I fell in love with this salad last summer and was glad to find this recipe! I made this tonight to go along with steaks on the grill. It was Delicious!!!! Thank you so much for posting this so I'm able to enjoy one of my favorites at home!
I love this salad so much. It’s my current favorite. The only thing I did different was to add a little salt and pepper. I tried it both ways, but adding the salt and pepper really brought all the wonderful flavors out.
This is a great salad! It's probably my new favorite. The only things I did differently was use a few slices of gluten free french bread since I can't have foccacia, and I left out the red onion because I didn't have any on hand. But I can't wait to try it with the salad when I get some!
Just a comment...I absolutely adore their salad. So glad you've posted this. Straight into my favorites. THX, Caroline
