In a large frying pan, brown pancetta or side pork until lightly browned (about 10 mins.) Add onion to pancetta and stir often until onion is sauteed (about another 10 mins.) Add cole slaw mix and stir often (for about another 10 mins.) until cabbage is totally wilted and done.

The cabbage will look like a lot at first but it really cooks down.

I have used proportionate amount of bacon for this recipe with excellent results.
Ahhhhh, what a great cabbage dish. I didn't feel like running to the store for the pancetta so I used bacon which produced a wonderful flavor for the cabbage. I did add a bit of black prepper also. Great cabbage dish, Barbara Polowetz. Thanks so much for sharing it.

This is comfort food for me! I made it for yesterday's lunch. Since I was cooking for one, I cut the recipe in half, which worked great, since the pancetta came in a 4 oz. package. This is a recipe that can be served as either a light main dish or a hearty side dish. I wll definitely be making this again, and cannot wait to try it with bacon!
